Hôtel Hermitage Monte-Carlo Welcomes Guillaume Ranvier as General Manager
A new chapter begins at the iconic Hôtel Hermitage Monte-Carlo with the appointment of Guillaume Ranvier as General Manager. He officially assumed his role on 5 January 2026, succeeding Louis Starck, who was recently appointed General Manager of the Hôtel de Paris Monte-Carlo.
An accomplished figure in international luxury hospitality, Guillaume Ranvier arrives in Monaco following his tenure as Hotel Manager at the legendary Four Seasons Hotel George V. With an impressive global career spanning Europe and the Middle East, he now takes the helm of one of the Principality’s most refined addresses at a pivotal moment of transformation.
A Career Defined by Excellence
A graduate of the École Supérieure de Cuisine Française in Paris, where he finished top of his class, Guillaume Ranvier built his career within the Hyatt Hotels group, holding senior leadership positions for over a decade.
He began at the Park Hyatt Paris-Vendôme as Director of Food & Beverage, later advancing to Director of Rooms and subsequently Director of Operations. During this time, he played an instrumental role in the hotel’s full renovation and in driving sustained improvements in guest satisfaction.
His international journey then led him to Doha, overseeing operations for the opening of a Park Hyatt property in the Middle East.
Following the global health crisis, Ranvier returned to the Côte d’Azur as Hotel Manager of the Hotel Martinez, successfully steering the property through its first post-pandemic season and a major operational reorganisation.
He was subsequently appointed General Manager of the Hyatt Regency Nice Palais de la Méditerranée, where he spearheaded the renovation of the restaurant, launched a strategic repositioning, and achieved record revenue in 2022.
Since 2023, at the Four Seasons Hotel George V, he has further strengthened a culture of excellence rooted in performance, team cohesion, and an uncompromising commitment to guest experience.
Across continents and cultures, Ranvier has cultivated a leadership style defined by rigour, attention to detail, and a deep respect for the craft of hospitality — qualities that position him perfectly to guide the continued evolution of the Hôtel Hermitage.

A Palace for Connoisseurs
Since 1928, the Hôtel Hermitage Monte-Carlo has embodied timeless elegance. With its Belle Époque façade, the spectacular Eiffel-designed dome crowning the Jardin d’Hiver, and sweeping Mediterranean views, the hotel remains one of Monaco’s most cherished architectural jewels.
Throughout its history, it has welcomed illustrious figures such as Marcel Pagnol, Francis Bacon, Josephine Baker, Maria Callas and Aristotle Onassis — personalities drawn to its discreet refinement and singular soul.
The hotel’s gastronomic excellence is equally distinguished. At Pavyllon Monte-Carlo, conceived by multi-starred chef Yannick Alléno, guests discover contemporary haute cuisine, while L’Abysse Monte-Carlo offers a refined Japanese-inspired dining experience.
As part of its ongoing transformation, the Hôtel Hermitage will unveil new suites this June, alongside the debut of Bar Gustave — an elegant new lobby bar set beneath the iconic Eiffel dome in the heart of the Jardin d’Hiver.

Writing the Next Chapter
Supported by the dedicated teams of the Monte-Carlo Société des Bains de Mer Group, Guillaume Ranvier takes the reins with both ambition and humility.
“I am very honoured to be responsible for this exceptional House of Connoisseurs that is the Hôtel Hermitage Monte-Carlo. I am also delighted to be able to follow in the footsteps of the hoteliers who have contributed to the reputation of this Monegasque landmark, accompanied by passionate, committed professionals who are deeply attached to this place and its history. Our ambition is to write a new chapter for the Hôtel Hermitage, one that looks resolutely to the future through its renovations, a service focused on detail, a personalised stay where every gesture has a purpose, and finally women and men dedicated to providing that extra touch of soul offering our guests an authentic, elegant and memorable experience that every connoisseur will appreciate.”
